High Protein Cottage Cheese Banana Bread
21st February, 2025This moist and protein packed banana bread is a healthy twist on the classic recipe.
Ingredients:
2 ripe bananas, mashed
3 large eggs
½ cup cottage cheese
3 tbs maple syrup (adjust to taste)
2 tsp vanilla extract
2 ½ cups almond flour
1 tsp baking soda
2 tsp ground cinnamon
Optional – chopped walnuts, chocolate chips, blueberries
Instructions:
- Preheat the oven to 175c.
- Line a loaf pan with parchment paper and lightly grease it
- In a large bowl, combine the mashed bananas, eggs, cottage cheese, maple syrup and vanilla extract
- Mix until smooth
- Add the almond flour, baking soda and cinnamon to the wet mixture and stir until fully combined
- Bake from approximately 50 minutes, if the top begins to brown too quickly cover with foil after 30 minutes
- To check if it’s done, insert a toothpick into the center, it should come out clean
- Remove from the oven and allow the bread to cool in the pan for 10 minutes
- Transfer to a wire rack to cool completely before slicing
