High Protein Cottage Cheese Banana Bread

This moist and protein packed banana bread is a healthy twist on the classic recipe.

 

Ingredients:

2 ripe bananas, mashed

3 large eggs

½ cup cottage cheese

3 tbs maple syrup (adjust to taste)

2 tsp vanilla extract

2 ½ cups almond flour

1 tsp baking soda

2 tsp ground cinnamon

Optional – chopped walnuts, chocolate chips, blueberries

 

Instructions:

  1. Preheat the oven to 175c.
  2. Line a loaf pan with parchment paper and lightly grease it
  3. In a large bowl, combine the mashed bananas, eggs, cottage cheese, maple syrup and vanilla extract
  4. Mix until smooth
  5. Add the almond flour, baking soda and cinnamon to the wet mixture and stir until fully combined
  6. Bake from approximately 50 minutes, if the top begins to brown too quickly cover with foil after 30 minutes
  7. To check if it’s done, insert a toothpick into the center, it should come out clean
  8. Remove from the oven and allow the bread to cool in the pan for 10 minutes
  9. Transfer to a wire rack to cool completely before slicing
